A look at Revival: the newest addition to Galley Bakery Square
GALLEY BAKERY SQUARE. IT’S NO SECRET MANY IN THE RESTAURANT INDUSTRY TOOK A BIG HIT DURING THE PANDEMIC AND AT TIMES STILL STRUGGLE TO RECOVER AND FIND STAFFING. BUT AS EMPLOYEES START TO GO BACK TO THE OFFICE AND AS THE SUMMER SEASON KICKS OFF, IT’S TIME TO FEATURE SOME NEW OPTIONS AROUND TOWN, INCLUDING A PITTSBURGH BUSINESS THAT’S BEEN GIVING CHEFS ON THE NORTH SIDE AND LARIMER THEIR OWN KITCHEN FOR THE CHANCE TO START THEIR OWN BUSINESS FOR THE FIRST TIME HERE IN THE HEART OF BAKERY SQUARE IN THE CITY’S LARIMER NEIGHBORHOOD. WE’RE ALL HERE TO KIND OF REALLY GROW ANY SORT OF ASPIRING CHEF. THE GALLEY GROUP INTRODUCES US TO THE FIRST OF TWO NEW CHEFS OPENING THEIR BUSINESSES IN THEIR FOOD HALL THAT HOUSES FOUR DIFFERENT RESTAURANTS AND A FULL SERVICE BAR. I JUST COOK FROM THE HEART FOR ASHLEY MCCOY OF CARNEGIE. YEAH, IT’S A NEW BEGINNING. IT REALLY IS. IT’S A REBIRTH. THE NAME OF HER NEW RESTAURANT AT GALLEY BAKERY SQUARE SYMBOLIZES A FRESH START AND A DREAM COME TRUE. THERE’S A MOVIE CALLED PURSUIT OF HAPPINESS THAT JOURNEY IS HERE. I RAISED MY DAUGHTER. I’VE YOU KNOW, I’VE OVERCOME FEAR OF WHAT MY DREAM HAS ALWAYS BEEN. AND NOW I GET TO LIVE IT WITH A MIX OF FRENCH AND AMERICAN FLAVORS. YOU’LL FIND EVERYTHING FROM SWEET AND SAVORY CREPES TO SMASH BURGERS AND SALADS ON REVIVALS. MENU. THE GALLEY IS YOU CAN’T EXPERIENCE ANYWHERE ELSE. YOU JUST CAN’T. YOU CAN’T EXPERIENCE LETTING YOUR KIDS GO PLAY HAVING A GAME ON. I THINK ONE OF THE HARDEST THINGS FOR CHEFS IS TO FIND THEIR NICHE AND TO REALLY HAVE THAT KIND OF CAPITAL TO TO GROW. WE HAVE A KITCHEN THAT’S ALREADY BUILT OUT FOR THEM. IT’S REALLY LOW COST, LOW RISK, BUT THEN IT GIVES THEM GREAT BRAND AWARENESS TO HELP THEM GROW THEIR BRAND AND THEN EVENTUALLY MOVE ON TO THEIR OWN BRICK AND MORTAR. ANOTHER DREAM FOR ASHLEY MCCOY, WHO’S PASSIONATE ABOUT COOKING, MAKING CONNECTIONS AND MOVING PAST PREVIOUS TRAUMAS, SHE EXPERIENCED THAT SHE NOW EXPRESSES IN THE ART ON HER BODY. IT’S HARD TO SURPASS MY TATTOOS. I EXPERIENCE PEOPLE JUDGMENT. IT’S OKAY, BECAUSE LOOK, I NEVER LET THAT GET ME. DOESN’T MATTER WHERE THE ROAD HAS TAKEN US IN THE PAST. THIS IS WHERE I STAND. AND I’M VERY PROUD TO SAY THAT I’M HERE. THIS IS WHAT I’M DOING. LOVE ME OR JUST LOVE MY FOOD HAHA. SHE IS SUCH A HARD WORKER. WE WISH HER ALL THE BEST. SOMETHING ELSE NEW AT GALLEY BAKERY SQUARE RIGHT NEXT TO HER RESTAURANT IS A CAJUN RESTAURANT COMING RIGHT NEXT TO REVIVAL. THE SAME OWNERSHIP GROUP IS REOPENING A MOUNT LEBANON LANDMARK. THE CORNER PUB, WHICH CLOSED LAST MARCH AFTER 80 YEARS IN BUSINESS, WILL NOW REOPEN THIS SUMMER AS ARTHUR’S CORNER PUB ON BOWER
