A look at Revival: the newest addition to Galley Bakery Square
It's no secret that many in the restaurant industry took a big hit during the pandemic and, at times, still struggle to recover and find staffing.
But as employees start to go back to the office and as the summer season kicks off, it's time to feature some new options around town. That includes a Pittsburgh business that's been giving chefs on the North Side and Larimer their own kitchen and a chance to start their own business for the first time.
In the heart of Bakery Square, the Galley Group introduces us to the first of two new chefs opening their businesses in their food hall, which houses four different restaurants and a full-service bar.
For Ashley McCoy of Carnegie, the name of Revival, a new restaurant at Galley Bakery Square, symbolizes a fresh start and a dream come true.
“There's a movie called 'The Pursuit of Happiness,' and that journey is here,” she said. “I raise my daughter, I've overcome fear of what my dream has always been, and now I get to live it.”
With a mix of French and American flairs, you'll find everything from sweet and savory crepes to smash burgers and salads on Revival's menu.
“What you find at the Galley, you can't experience anywhere else,” McCoy said. “You can't experience going and letting the kids play and watching the game.”
“I think one of the hardest things for a chef is to find their niche and to really have that kind of capital to grow,” said Alex DeConcillis, Galley Group’s senior director of operations. “We have a kitchen that's already built out for them. It's really low cost/low risk, but then it gives them great brand awareness to help build their branding and eventually move on to their own brick and mortar.”
Another dream for McCoy, who's passionate about cooking, making connections and moving past previous traumas she expresses in the tattoos on her body.
“It doesn't matter where the world has taken us in the past,” said McCoy. “This is where I stand, and I'm very proud to say I'm here. This is what I'm doing. Love me or just love my food.”
Something else new at Galley Bakery Square, right next to McCoy’s restaurant, is a Cajun restaurant. The same ownership is reopening a Mt. Lebanon landmark, the Corner Pub, which closed last month after 80 years of business, will now open this summer as Arthur's Corner Pub on Bower Hill Road.
